Gongfu Style Tea
In 1999 Harbour Lights Guest House owner, Pat Craig, went to the People's Republic of China to study Mandarin and to immerse herself in Chinese culture. While teaching English as a second language at South Ocean International School (Nanyang Xuexiao), she became interested in tea through a school colleague. Mr. Xu invited her to come with him to his hometown in the sacred Dao mountain range known as Lao Shan. She was able to visit and spend time with the factory workers and managers of a small boutique tea cooperative called Blue Ocean Teas (Hai Qing He Xi).
Pat's experiences at the tea farm inspired her to learn even more about tea, and through a Russian friend who had attended university in Beijing, Pat became acquainted with a Buddhist tea master. Wang Bing first introduced Pat to the Chinese tea ceremony known as gongfu tea. Unlike the Japanese tea ceremony, which is more famous, the Chinese approach centers less on the procedure itself and focuses instead upon how to appreciate the taste, flavours, and spirit of tea.
At Harbour Lights Guest House, we invite you to experience tea as a connoisseur's art form. Chinese gongfu tea is the fine art of tasting and appreciating tea. This tasting session will introduce you to the four major categories of tea (white, green, oolong, and black), with side-by-side tastings that will develop your palate for fine, premium teas and will teach you the steps in preparing gongfu tea for guests.

Please note that private tea tastings are available in other locations, by appointment. Depending upon requested location, there may be an added transportation surcharge. We also offer customized tea tastings that focus on a single category of tea, such as oolong or green.
